Chanfana Recipe

– 1.5 kg of goat or lamb meat, cut into chunks

– 1 tablespoon of paprika
– 1 teaspoon of ground cumin
– Salt and pepper to taste
– Olive oil for cooking
Instructions:
1. In a large bowl, marinate the meat with red wine, garlic, bay leaves, paprika, cumin, salt, and pepper. Cover the bowl and refrigerate for at least 12 hours or overnight.
2. Preheat the oven to 160°C (320°F).
3. Heat olive oil in a large oven-safe pot or casserole dish over medium heat. Remove the meat from the marinade, reserving the marinade for later use.
4. Sear the meat in batches until browned on all sides. Set aside.
5. In the same pot, add the reserved marinade and bring it to a boil. Cook for a few minutes to eliminate the alcohol and enhance the flavors.
6. Return the meat to the pot, cover with a lid, and transfer it to the preheated oven. Cook for approximately 3 to 4 hours or until the meat is tender and easily falls apart.
