– 500 grams of lamb or beef, cut into small pieces
– 2 cups of basmati rice
– 4 pieces of khobz (Yemeni bread) or pita bread, torn into pieces
– 4 cups of beef or lamb broth
– 1 onion, finely chopped
– 4 cloves of garlic, minced
– 2 tablespoons of vegetable oil
– 1 tablespoon of ground cumin
– 1 tablespoon of ground coriander
– 1 teaspoon of ground turmeric
– Salt and black pepper to taste
– Chopped parsley for garnish
Instructions:
1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until they turn golden brown.
2. Add the meat pieces to the pot and cook until they are browned on all sides.
3. Add the ground cumin, ground coriander, ground turmeric, salt, and black pepper to the pot. Stir well to coat the meat with the spices.
4. Pour in the broth and bring it to a boil. Reduce the heat to low, cover the pot, and let the meat simmer for about 1 hour or until it becomes tender.
5. While the meat is simmering, rinse the rice under cold water until the water runs clear. Drain the rice thoroughly.
6. In a separate pot, bring 4 cups of water to a boil. Add the drained rice and cook it until it is 70% cooked. Drain the rice and set it aside.
7. Preheat the oven to 180°C (350°F).
8. In a baking dish, arrange a layer of torn bread pieces. Pour some of the meat broth over the bread to moisten it.
9. Spread a layer of cooked rice over the bread, then arrange a layer of the cooked meat on top.
10. Repeat the layering process until all the ingredients are used, ending with a layer of rice on top.
11. Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 30 minutes or until the flavors meld together and the dish is heated through.
12. Remove the foil and garnish the fattah with chopped parsley.
13. Serve hot and enjoy this delectable Yemeni dish!
