Mauritian Biriyani Recipe

Ingredients:

– 500g basmati rice
– 500g chicken (or lamb, beef, or vegetables for a vegetarian version)
– 2 onions, thinly sliced
– 4 cloves of garlic, minced
– 2-inch piece of ginger, grated
– 2 tomatoes, chopped
– 1 cup plain yogurt
– 2 tablespoons biriyani spice mix (or a mixture of ground cinnamon, cardamom, cloves, and cumin)
– 1 teaspoon turmeric powder
– 1 teaspoon chili powder (adjust according to spice preference)
– 1 cup fried onions (store-bought or homemade)
– Handful of fresh mint and coriander leaves, chopped
– 4 tablespoons ghee or vegetable oil
– Salt to taste

Instructions:

1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
2. In a large, deep pan, heat the ghee or vegetable oil over medium heat. Add the sliced onions and cook until golden brown.
3. Add the minced garlic and grated ginger to the pan and cook for another minute.
4. Add the chicken (or meat/vegetables) to the pan and cook until browned on all sides.
5. Stir in the chopped tomatoes, biriyani spice mix, turmeric powder, chili powder, and salt. Cook for 2-3 minutes until the flavors are well combined.
6. Add the yogurt to the pan and mix well. Cook for another 5 minutes to allow the flavors to meld together.
7. In a separate pot, bring water to a boil. Add the soaked and drained rice to the boiling water and cook until it is 70% cooked. Drain the rice.
8. Layer the partially cooked rice over the meat or vegetable mixture in the pan. Sprinkle the fried onions, mint leaves, and coriander leaves on top.
9. Cover the pan with a tight-fitting lid and cook on low heat for about 30 minutes, allowing the flavors to infuse and the rice to steam.
10. Once cooked, gently fluff the rice and meat/vegetables together using a fork, ensuring all the layers are mixed well.
11. Serve the Mauritian Biriyani hot with raita (yogurt-based sauce) or a side salad.

FAQs about Mauritian Biriyani:

1. Can I make Mauritian Biriyani vegetarian?

Yes, you can easily adapt the recipe to make it vegetarian. Simply replace the chicken or meat with an assortment of vegetables like potatoes, carrots, peas, and bell peppers. The cooking time may vary slightly, so ensure the vegetables are cooked to your desired tenderness.

2. Can I use a store-bought biriyani spice mix?

Yes, you can use a store-bought biriyani spice mix if you have difficulty finding the individual spices. However, making your own spice mix allows you to adjust the flavors and tailor it to your liking. Feel free to experiment with the proportions of cinnamon, cardamom, cloves, and cumin to suit your taste preferences.

3. How do I ensure the rice doesn’t stick together?

To prevent the rice from sticking together, it is important to rinse it well before cooking to remove excess starch. Additionally, boiling the rice until it is only 70% cooked and then steaming it with the meat/vegetables allows the grains to cook evenly and separate easily. Using a fork to gently fluff the rice after cooking will also help in keeping the grains separate.
