Brânză de burduf Recipe from Moldovan Cuisine
Here is a simple recipe to make Brânză de burduf at home:
Ingredients:
– 2 liters of fresh sheep’s milk
– 1/4 teaspoon of calcium chloride (optional)
– 1/4 teaspoon of mesophilic starter culture
– 1/8 teaspoon of liquid animal rennet
– Non-iodized salt (to taste)
Instructions:
1. Heat the milk in a large pot over low heat until it reaches a temperature of 30°C (86°F). If using calcium chloride, dissolve it in 1/4 cup of non-chlorinated water and add it to the milk, stirring gently.
2. Sprinkle the mesophilic starter culture over the milk’s surface and let it rehydrate for a minute. Stir gently for a few seconds.
3. Cover the pot and allow the milk to ripen for 1 hour at room temperature.
4. Dilute the liquid rennet in 1/4 cup of non-chlorinated water and add it to the milk, stirring gently in an up and down motion.
5. Cover the pot again and let the milk coagulate for approximately 1 hour or until you observe a clean break.
6. Cut the curds into small cubes using a long knife and let them rest for 5 minutes.
7. Slowly heat the curds to 40°C (104°F) over a period of 30 minutes, stirring gently occasionally. Hold at this temperature for an additional 30 minutes.
8. Line a cheese mold with cheesecloth and gently ladle the curds into the mold. Allow the whey to drain naturally through the cheesecloth.
9. After 4 hours, remove the cheese from the mold and sprinkle non-iodized salt over the entire surface. Flip the cheese and repeat the salting process on the other side.
10. Let the cheese age in a cool, dry place for at least a week. The longer it ages, the stronger the flavor will become.
