Ciorbă de burtă Recipe from Moldovan Cuisine

Ingredients:

  • 500g beef tripe
  • 1 onion, finely chopped
  • 2 carrots, peeled and diced
  • 2 potatoes, peeled and diced
  • 1 red bell pepper, chopped
  • 3 cloves of garlic, minced
  • 2 tablespoons vegetable oil
  • 2 tablespoons tomato paste
  • 1 tablespoon vinegar
  • 1 bay leaf
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions:

  1. Start by cleaning the beef tripe properly. Rinse it under cold water and remove any excess fat or membranes. Cut it into small, bite-sized pieces.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant and golden.
  3. Add the tripe to the pot and cook for a few minutes until it starts to brown slightly.
  4. Stir in the diced carrots, potatoes, and red bell pepper. Cook for another 5 minutes, stirring occasionally.
  5. In a small bowl, mix together the tomato paste, vinegar, paprika, salt, and pepper. Add this mixture to the pot and stir well.
  6. Add enough water to cover the ingredients in the pot. Bring the soup to a boil, then reduce the heat and let it simmer for about 1.5 to 2 hours, or until the tripe is tender.
  7. Remove the bay leaf from the soup and adjust the seasoning if needed.
  8. Serve the ciorbă de burtă hot, garnished with freshly chopped parsley.
