Sarmale Recipe from Moldovan Cuisine

Ingredients:

– 1 large head of cabbage
– 500g ground pork or a mixture of pork and beef
– 1 cup rice, washed and drained
– 1 medium onion, finely chopped
– 3 cloves of garlic, minced
– 1 tablespoon tomato paste
– 1 teaspoon dried thyme
– 1 teaspoon paprika
– 1 teaspoon dried dill
– Salt and pepper to taste
– 3 cups vegetable broth or water
– Sour cream (optional, for serving)

Instructions:

1. Carefully remove the leaves from the cabbage, making sure to keep them intact. Blanch the cabbage leaves in boiling water for a few minutes until they become soft and pliable. Set aside.
2. In a large bowl, combine the ground meat, rice, onion, garlic, tomato paste, thyme, paprika, dill, salt, and pepper. Mix well until all the ingredients are thoroughly combined.
3. Take one cabbage leaf and place a small portion of the meat mixture in the center. Roll the leaf tightly, tucking in the sides as you go, to form a neat roll. Repeat with the remaining cabbage leaves and filling.
4. Place the cabbage rolls in a large pot, seam side down, ensuring they fit snugly. Pour the vegetable broth or water over the rolls, making sure they are fully submerged.
5. Cover the pot and cook the sarmale over low heat for about 2-3 hours, or until the cabbage leaves are tender and the filling is fully cooked.
6. Serve the sarmale hot, accompanied by a spoonful of sour cream if desired. Enjoy!

FAQs about Sarmale Recipe

A: Yes, you can use ground beef, turkey, or a combination of meats according to your preference. Traditionally, pork is commonly used in Moldovan cuisine, but feel free to experiment with other options.

Q: Can I make sarmale vegetarian or vegan?

A: Absolutely! For a vegetarian version, you can replace the ground meat with a mixture of vegetables such as mushrooms, carrots, onions, and peppers. For a vegan version, omit the meat and use vegetable broth instead of meat broth.

Q: How can I prevent the cabbage leaves from tearing?

A: To prevent tearing, it’s crucial to blanch the cabbage leaves before rolling. This process softens the leaves, making them more pliable and less prone to tearing.
