Nacatamal Recipe from Nicaraguan Cuisine
Ingredients:
– 4 cups masa (corn dough)
– 1 cup lard or vegetable shortening
– 1 cup pork or chicken broth
– 2 teaspoons salt
– 1 teaspoon baking powder
– 1 teaspoon achiote powder (annatto)
– 1 1/2 cups cooked pork or chicken, shredded
– 1 cup rice, cooked
– 2 medium potatoes, cooked and diced
– 1 carrot, cooked and diced
– 1 onion, finely chopped
– 1 bell pepper, finely chopped
– 1 tomato, finely chopped
– 4 cloves garlic, minced
– 1 teaspoon cumin
– 1 teaspoon oregano
– 1/2 teaspoon black pepper
– 1/4 cup fresh cilantro, chopped
– 12 large banana leaves, cleaned and cut into rectangles
Instructions:
1. In a large mixing bowl, combine the masa, lard or vegetable shortening, broth, salt, baking powder, and achiote powder. Mix well until a smooth dough is formed.
2. In a separate bowl, combine the shredded pork or chicken, cooked rice, potatoes, carrot, onion, bell pepper, tomato, garlic, cumin, oregano, black pepper, and cilantro. Mix well to incorporate all the ingredients.
3. Lay a banana leaf rectangle on a flat surface. Spoon about 1/4 cup of the masa dough onto the center of the leaf and flatten it with the back of a spoon.
4. Add a generous amount of the pork or chicken filling on top of the masa dough.
5. Fold the sides of the banana leaf over the filling, then fold the bottom and top edges to enclose the filling completely.
6. Repeat the process with the remaining masa dough and filling until all the ingredients are used.
7. Place the wrapped nacatamales in a steamer, making sure they are tightly packed to prevent them from opening during cooking.
8. Steam the nacatamales for about 2-3 hours, or until the masa dough is cooked and firm.
9. Remove the nacatamales from the steamer and let them cool for a few minutes before unwrapping them.
10. Serve the nacatamales warm and enjoy!
