Isi Ewu Recipe
Here is a traditional recipe for Isi Ewu:
Ingredients:
– 2 pounds of goat head
– 2 tablespoons of powdered edible potash
– 2 tablespoons of ground Ehu seeds (calabash nutmeg)
– 2 tablespoons of ground crayfish
– 2 habanero peppers
– 2 onions, chopped
– 4 Utazi leaves, shredded
– 2 tablespoons of palm oil
– Salt to taste
Instructions:
1. Clean the goat head thoroughly, removing any hair and skin. Cut it into smaller pieces.
2. In a large pot, add the goat head pieces, powdered potash, and enough water to cover the meat. Cook over medium heat until the meat is tender.
3. While the meat is cooking, dissolve the edible potash in water and let it settle for a few minutes. Drain the water and set aside.
4. In a separate pot, roast the Ehu seeds until they darken slightly, then grind them into a fine powder.
5. Blend the habanero peppers and one onion together.
6. Heat the palm oil in a separate pot, add the ground crayfish, blended peppers and onion, and the ground Ehu seeds. Stir well to combine.
7. Add the cooked goat head pieces, including the stock, into the pot with the palm oil mixture. Stir well to combine.
8. Add salt to taste and simmer for about 10 minutes to allow the flavors to meld together.
9. Finally, add the shredded Utazi leaves and simmer for an additional 2 minutes.
10. Serve hot with pounded yam, fufu, or any other Nigerian swallow of your choice.
