Kabsa Recipe from Omani Cuisine
Ingredients:
– 2 cups Basmati rice
– 500 grams chicken, cut into pieces
– 2 onions, finely chopped
– 4 garlic cloves, minced
– 2 tomatoes, diced
– 2 carrots, diced
– 1 tablespoon tomato paste
– 1 tablespoon kabsa spice mix (a blend of coriander, cumin, cardamom, cloves, cinnamon, and black pepper)
– 3 cups chicken broth
– 1 tablespoon ghee (clarified butter)
– Salt, to taste
– Chopped parsley or cilantro for garnish
Instructions:
1. Rinse the rice thoroughly and soak it in water for 30 minutes. Drain and set aside.
2. In a large pot, heat the ghee over medium heat. Add the onions and garlic and sauté until golden brown.
3. Add the chicken pieces and cook until they are browned on all sides.
4. Stir in the diced tomatoes, carrots, and tomato paste. Cook for a few minutes until the tomatoes start to break down.
5. Add the kabsa spice mix and salt, and stir to coat the ingredients evenly.
6. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover the pot, and simmer for about 20 minutes or until the chicken is tender.
7. While the chicken is cooking, bring a separate pot of water to a boil. Add the soaked rice and cook until it is almost done. Drain the rice and set aside.
8. Once the chicken is cooked, remove it from the pot and set it aside. In the same pot, spread the cooked rice evenly over the sauce.
9. Place the chicken pieces on top of the rice and cover the pot. Cook on low heat for an additional 10-15 minutes until the rice is fully cooked and flavors have melded together.
10. Remove from heat and let it rest for a few minutes. Fluff the rice with a fork and garnish with chopped parsley or cilantro before serving.
FAQ
1. Can I use other types of meat instead of chicken?
Yes, Kabsa can be made with other meats such as lamb, beef, or even seafood. The cooking time may vary depending on the type of meat used.
2. Where can I find the kabsa spice mix?
You can find pre-made kabsa spice mix at Middle Eastern or specialty grocery stores. Alternatively, you can make your own by combining equal parts of ground coriander, cumin, cardamom, cloves, cinnamon, and black pepper.
3. Can I substitute regular rice for basmati rice?
While basmati rice is commonly used in kabsa for its aromatic and fluffy texture, you can use regular long-grain rice as a substitute if needed. However, keep in mind that the flavor and texture may differ slightly from the traditional dish.
