Here is a traditional recipe for Qabuli from Omani cuisine:
Ingredients:
– 2 cups of basmati rice
– 500 grams of lamb, cubed
– 2 onions, thinly sliced
– 3 tablespoons of ghee or clarified butter
– 1 teaspoon of cumin powder
– 1 teaspoon of coriander powder
– 1 teaspoon of cardamom powder
– 1 teaspoon of turmeric powder
– 1 teaspoon of cinnamon powder
– Salt, to taste
– 1 cup of raisins
– 1 cup of almonds, blanched and slivered
– Fresh cilantro or parsley, for garnish
Instructions:
1. Rinse the basmati rice thoroughly and soak it in water for about 30 minutes. Drain and set aside.
2. In a large pot, heat the ghee or clarified butter over medium heat. Add the sliced onions and cook until golden brown.
3. Add the cubed lamb to the pot and cook until browned on all sides.
4. Add the cumin powder, coriander powder, cardamom powder, turmeric powder, cinnamon powder, and salt to the pot. Stir well to coat the meat with the spices.
5. Add enough water to cover the meat and bring it to a boil. Reduce the heat to low, cover the pot, and simmer for about 1 hour or until the meat is tender.
6. In a separate pot, bring water to a boil and cook the soaked rice until it is 70% cooked. Drain the rice and set aside.
7. Preheat the oven to 180°C (350°F).
8. In a baking dish, layer the partially cooked rice and the cooked meat with its gravy. Repeat the layers until all the rice and meat are used. Sprinkle raisins and almonds on top.
9. Cover the baking dish with aluminum foil and bake in the preheated oven for about 30 minutes or until the rice is fully cooked and the flavors have melded together.
10. Remove from the oven and let it rest for a few minutes. Garnish with fresh cilantro or parsley before serving.
