Ingredients

– 1 whole lamb, approximately 20-25 kilograms
– 10 cloves of garlic, crushed
– 2 tablespoons ground cumin
– 2 tablespoons ground coriander
– 2 tablespoons ground cardamom
– 2 tablespoons ground black pepper
– 2 tablespoons ground cinnamon
– 2 tablespoons salt
– Juice of 4 lemons
– Banana leaves (optional)
– Aluminum foil

Preparation

1. Thoroughly clean the lamb, removing excess fat and any undesirable parts.
2. In a bowl, combine the crushed garlic, cumin, coriander, cardamom, black pepper, cinnamon, salt, and lemon juice to create a marinade.
3. Rub the marinade all over the lamb, ensuring that every part is well coated. Let it marinate for at least 24 hours, preferably up to 48 hours, in a cool place.
4. If using banana leaves, wash and soften them by heating them over an open flame or soaking them in hot water. These will help keep the lamb moist during cooking.
5. Preheat the oven to 120°C (250°F).
6. Wrap the marinated lamb tightly in banana leaves (if using) and then in multiple layers of aluminum foil to create a sealed package.
7. Dig a hole in the ground, around 2 feet deep, and large enough to accommodate the wrapped lamb.
8. Create a fire in the hole, using wood or charcoal, and let it burn until the flames die down, leaving only hot embers.
9. Place the wrapped lamb in the hole, cover it entirely with the remaining hot embers, and then cover the hole with sand or soil to create an airtight seal.
10. Leave the lamb to cook underground for 24-48 hours, depending on the lamb’s size and desired tenderness.
11. Carefully remove the lamb from the hole, unwrap it, and serve hot.

Frequently Asked Questions

1. Can I use a different type of meat for Shuwa?

Shuwa traditionally uses lamb, but you can experiment with other meats like goat or beef. Just make sure to adjust the cooking time accordingly as different meats may require different cooking durations.

2. Is there a vegetarian alternative for Shuwa?

While Shuwa is primarily a meat-based dish, you can create a vegetarian version using large chunks of vegetables like pumpkin, carrots, potatoes, and eggplant. Marinate the vegetables with the same spices, wrap them in banana leaves, and cook them using the same method.

3. Can I prepare Shuwa in an oven instead of burying it?

Yes, if you don’t have access to a suitable outdoor location or prefer a more convenient method, you can cook Shuwa in an oven. Preheat your oven to 120°C (250°F) and cook the wrapped lamb for 24-48 hours, depending on the size, until it reaches the desired tenderness. Ensure the lamb is tightly wrapped in aluminum foil to retain moisture.
