Bulalo Recipe
Here is a traditional recipe for Bulalo:
Ingredients:
– 2 to 3 pounds beef shanks
– 2 to 3 pounds marrow bones
– 1 onion, quartered
– 4 cloves garlic, minced
– 2 tablespoons fish sauce
– Salt and pepper to taste
– Corn on the cob, cut into 2-inch pieces
– Bok choy or pechay (Chinese cabbage)
– 1 tablespoon whole peppercorns
– Water for boiling
– Optional: patis (fish sauce) and calamansi (Philippine lime) for dipping sauce
Instructions:
1. In a large pot, bring water to a boil. Add the beef shanks and marrow bones, and let it boil for a few minutes. This step helps remove impurities.
2. Drain the water and rinse the meat under cold water. Clean the pot and return the meat to it.
3. Add enough water to cover the meat. Bring to a boil and skim off any scum that rises to the surface.
4. Once the broth is clear, add the onion, garlic, fish sauce, salt, and whole peppercorns. Reduce heat to low and let it simmer for about 2 to 3 hours, or until the meat is tender and the flavors are well-infused.
5. Skim off any excess fat and add the corn on the cob. Simmer for an additional 10 minutes.
6. Add the bok choy or pechay and cook for another 5 minutes, or until the vegetables are tender.
7. Season with salt and pepper to taste.
8. Serve hot with steamed rice and enjoy!
FAQs about Bulalo:
1. Can I use other cuts of beef instead of shanks?
While beef shanks are traditionally used in Bulalo, you can also use other cuts such as beef ribs or oxtail. These cuts also contain a good amount of marrow and collagen, which contribute to the richness of the broth.
2. Is it necessary to boil the meat before simmering?
Boiling the meat before simmering helps remove impurities and creates a clearer broth. It also helps to reduce the strong beefy smell that can sometimes be present in the meat.
3. Can I add other vegetables to the dish?
Absolutely! Bulalo is a versatile dish, and you can add other vegetables like carrots, potatoes, or cabbage to enhance the flavors and make it even more nutritious. Just make sure to adjust the cooking time accordingly, as different vegetables require different cooking times.
