  • 1 cup small fresh shrimps, peeled and deveined
  • 1 cup cornstarch
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup water
  • 1/2 cup grated squash or sweet potato
  • 1/2 cup chopped green onions
  • 1/2 cup cooking oil

Instructions:

  1. In a mixing bowl, combine cornstarch, all-purpose flour, baking powder, garlic powder, salt, and ground black pepper. Mix well.
  2. Add water gradually to the dry ingredients while stirring continuously until the batter becomes smooth and free of lumps.
  3. Add the grated squash or sweet potato and chopped green onions to the batter. Mix well to distribute the ingredients evenly.
  4. Add the shrimps to the batter and stir gently to coat them with the mixture.
  5. In a frying pan, heat cooking oil over medium heat.
  6. Scoop a spoonful of the batter mixture and carefully drop it into the hot oil, shaping it into a small round fritter. Repeat this step to make more fritters, but be careful not to overcrowd the pan.
  7. Fry the fritters until they turn golden brown and crispy, approximately 3-4 minutes per side.
  8. Remove the fritters from the pan and place them on a plate lined with paper towels to absorb excess oil.
  9. Serve hot and enjoy with your preferred dipping sauce.
