Ghuzi Recipe
Ingredients
- 1 whole lamb or chicken
- 2 cups basmati rice
- 4 cups chicken or lamb stock
- 2 tablespoons ghee or vegetable oil
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cardamom
- 1 teaspoon ground black pepper
- 1 teaspoon ground cumin
- Salt to taste
- Roasted almonds and pine nuts for garnish
Instructions
- Clean and rinse the lamb or chicken thoroughly.
- In a large pot, add the meat, onions, garlic, and spices. Add enough water to cover the meat and bring it to a boil. Reduce the heat and let it simmer for about 2 hours until the meat is tender. Skim off any foam that rises to the surface.
- Remove the meat from the pot and place it on a baking tray. Preheat the oven to 400°F (200°C).
- In a separate pot, heat ghee or vegetable oil, then add the rice and cook for a few minutes until it becomes translucent.
- Add the stock to the rice and bring it to a boil. Reduce the heat, cover, and let it simmer until the rice is cooked and all the liquid is absorbed.
- While the rice is cooking, place the tray with the meat in the oven and roast for about 20-30 minutes until the skin is crispy and golden.
- Once the meat is roasted, place it on a serving platter and arrange the cooked rice around it.
- Garnish with roasted almonds and pine nuts.
- Serve hot and enjoy!
