Machbūs Recipe from Qatari Cuisine

Ingredients:

– 2 cups of basmati rice
– 500 grams of chicken or lamb, cut into pieces
– 2 large onions, finely chopped
– 4 cloves of garlic, minced
– 2 tomatoes, diced
– 2 tablespoons of ghee (clarified butter)
– 1 teaspoon of turmeric powder
– 1 teaspoon of ground cinnamon
– 1 teaspoon of ground cardamom
– 1 teaspoon of ground coriander
– 1 teaspoon of ground cumin
– Salt and pepper to taste
– Fresh coriander leaves for garnish

Instructions:

1. Rinse the basmati rice in cold water until the water runs clear. Soak the rice in water for approximately 30 minutes, then drain.
2. Heat the ghee in a large pot over medium heat. Add the chopped onions and garlic, and sauté until they turn golden brown.
3. Add the chicken or lamb pieces to the pot and cook until they are browned on all sides.
4. Stir in the diced tomatoes and all the spices (turmeric, cinnamon, cardamom, coriander, cumin, salt, and pepper). Cook for a few minutes until the tomatoes start to break down and release their juices.
5. Add 4 cups of water to the pot and bring to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 30 minutes until the meat is tender.
6. Remove the meat from the pot and set it aside. Add the soaked and drained rice to the pot, stirring well to coat it with the flavors in the pot.
7. Bring the pot to a boil again, then reduce the heat to low, cover, and let it cook for about 15-20 minutes until the rice is tender and has absorbed all the liquid.
8. Once the rice is cooked, fluff it with a fork and return the meat to the pot, mixing it gently with the rice.
9. Garnish with fresh coriander leaves and serve hot.
