Mandi Recipe

Ingredients:

– 1kg lamb or chicken, cut into pieces
– 3 cups basmati rice
– 1 tablespoon Arabic spice mix (baharat)
– 2 teaspoons ground cumin
– 2 teaspoons ground coriander
– 1 teaspoon ground turmeric
– 4 tablespoons ghee or vegetable oil
– 1 large onion, finely chopped
– 4 cloves garlic, minced
– Salt to taste
– 4 cups hot water
– 1 cinnamon stick
– 4 cardamom pods
– 4 cloves
– 1 bay leaf
– Chopped fresh parsley or coriander for garnish

Instructions:

1. Rinse the rice under cold water until the water runs clear, then soak the rice in water for 30 minutes. Drain and set aside.
2. In a large pot, heat the ghee or vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until golden brown.
3. Add the meat pieces to the pot and brown them on all sides.
4. Stir in the Arabic spice mix, ground cumin, ground coriander, ground turmeric, and salt. Cook for a minute to release the flavors.
5. Pour in the hot water and add the cinnamon stick, cardamom pods, cloves, and bay leaf. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let the meat simmer for 1 to 1.5 hours, or until tender.
6. Meanwhile, prepare the rice by bringing a large pot of salted water to a boil. Add the soaked and drained rice, and cook until it is almost cooked through but still slightly firm. Drain the rice and set aside.
7. Preheat your oven to 180°C (350°F).
8. In a large baking dish, spread half of the cooked rice evenly on the bottom. Place the cooked meat on top of the rice, then cover the meat with the remaining rice.
9. Cover the baking dish with foil and bake in the preheated oven for about 20-30 minutes, until the rice is fully cooked and fluffy.
10. Serve the mandi hot, garnished with freshly chopped parsley or coriander.
