Pindjur Recipe

Ingredients:

– 6 red bell peppers
– 1 medium-sized eggplant
– 4 ripe tomatoes
– 4 cloves of garlic, minced
– 2 tablespoons of vegetable oil
– 1 tablespoon of vinegar
– Salt and pepper to taste

Instructions:

1. Preheat your oven to 400°F (200°C).
2. Wash the peppers, eggplant, and tomatoes thoroughly.
3. Place the red peppers and eggplant on a baking sheet lined with parchment paper. Pierce the eggplant a few times with a fork to prevent it from bursting.
4. Roast the peppers and eggplant in the preheated oven for 30-40 minutes, or until the skin is charred and blistered.
5. Remove the baking sheet from the oven and immediately cover the peppers and eggplant with a clean kitchen towel. This will help steam them, making it easier to remove the skin.
6. Let the roasted vegetables cool for about 10 minutes, then peel off the skin and discard the seeds from the peppers.
7. Chop the roasted peppers, eggplant, and tomatoes into small pieces.
8. Heat the vegetable oil in a large pot over medium heat. Add the minced garlic and sauté for a minute until fragrant.
9. Add the chopped peppers, eggplant, and tomatoes to the pot. Stir well to combine.
10. Reduce the heat to low and let the mixture simmer for about 1 hour, stirring occasionally.
11. Stir in the vinegar, salt, and pepper, adjusting the seasonings to your taste. Cook for an additional 10 minutes.
12. Remove the pot from the heat and let the pindjur cool completely.
13. Once cooled, transfer the pindjur to sterilized jars. Seal the jars tightly and store in the refrigerator for up to 2 weeks.
