Surbiyaan Recipe from Somali Cuisine

Here is a recipe to make Surbiyaan, a delicious Somali rice dish:

Ingredients:

– 2 cups basmati rice
– 1 pound meat (chicken, beef, or goat), cut into pieces
– 1 large onion, finely chopped
– 2 tomatoes, chopped
– 3 cloves of garlic, minced
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1 teaspoon turmeric powder
– 1 teaspoon paprika
– 1 teaspoon black pepper
– 4 tablespoons vegetable oil
– Salt to taste
– Water

Instructions:

1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.
2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic. Sauté until they turn golden brown.
3. Add the meat pieces to the pot and cook until they are browned on all sides.
4. Stir in the chopped tomatoes, ground cumin, ground coriander, turmeric powder, paprika, black pepper, and salt. Cook for a few minutes until the tomatoes are soft and the spices are fragrant.
5. Add the drained rice to the pot and mix well with the meat and spices.
6. Pour enough water into the pot to cover the rice by about 1 inch. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the rice is cooked and tender.
7. Once the rice is cooked, remove the pot from the heat and let it sit, covered, for another 5 minutes.
8. Fluff the rice with a fork before serving.
9. Surbiyaan can be garnished with fresh cilantro or parsley and served with a side of salad or chutney.
