Koeksisters Recipe

Here is a classic recipe to make delicious koeksisters at home:

Ingredients:

– 4 cups all-purpose flour
– 2 teaspoons baking powder
– 1/4 teaspoon salt
– 4 tablespoons cold butter, grated
– 2 large eggs
– 1/2 cup milk
– Oil, for deep frying

Syrup:

– 2 cups sugar
– 1 cup water
– 1/2 cup honey
– 1 cinnamon stick
– 1 teaspoon lemon juice

Instructions:

1. In a large mixing bowl, combine the flour, baking powder, and salt. Add the grated butter and rub it into the dry ingredients until the mixture resembles breadcrumbs.
2. In a separate bowl, whisk the eggs and milk together. Gradually pour this mixture into the dry ingredients, stirring until a soft dough forms.
3. Transfer the dough to a floured surface and knead it for a few minutes until smooth. Shape the dough into a ball, cover it with a clean cloth, and let it rest for 30 minutes.
4. While the dough is resting, prepare the syrup. In a saucepan, combine the sugar, water, honey, cinnamon stick, and lemon juice. Bring the mixture to a boil, then reduce the heat and simmer for 5 minutes. Remove from heat and let it cool completely.
5. Roll out the dough on a floured surface to a thickness of about 5mm. Cut the dough into strips, approximately 10cm long and 2cm wide. Make a lengthwise slit in the center of each strip, then pull one end through the slit to create a braided effect.
6. Heat oil in a deep pot or fryer to 180°C. Fry the koeksisters, a few at a time, until golden brown and crispy. Remove them from the oil and immediately submerge them in the cold syrup for a few minutes, allowing them to soak up the sweetness.
7. Carefully transfer the koeksisters to a wire rack to cool and drip off excess syrup.
8. Once cooled, serve the koeksisters and enjoy their sticky, sweet goodness!
