Fiadoe Recipe from Surinamese Cuisine
Ingredients:
– 2 cups all-purpose flour
– 1/2 cup unsalted butter, cold and cubed
– 1/4 cup granulated sugar
– 1/4 teaspoon salt
– 1 egg, beaten
– 1 cup coconut milk
– 1 cup grated coconut
– 1 cup condensed milk
– 1 teaspoon vanilla extract
– 1/4 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– Powdered sugar for dusting
Instructions:
1. In a large mixing bowl, combine the flour, sugar, and salt. Add the cold butter and use your fingers or a pastry cutter to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
2. Add the beaten egg and coconut milk to the mixture, and knead until a smooth dough is formed. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
3. Preheat your oven to 350°F (175°C).
4. In a separate mixing bowl, combine the grated coconut, condensed milk, vanilla extract, ground cinnamon, and ground nutmeg. Mix well to form a creamy coconut filling.
5. Remove the dough from the refrigerator and divide it into 2 equal portions. Roll out one portion to fit the bottom of a greased baking dish.
6. Spread the coconut filling evenly over the dough in the baking dish. Roll out the second portion of dough and place it on top of the filling, sealing the edges with a fork.
7. Bake the fiadoe in the preheated oven for about 30 minutes or until golden brown.
8. Once baked, remove the fiadoe from the oven and let it cool. Dust with powdered sugar before serving.
