Recipe

Ingredients:

  • 500 grams of fresh fish fillets (such as tilapia or red snapper)
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of ginger, grated
  • 2 tablespoons of curry powder
  • 1 teaspoon of turmeric powder
  • 1 can (400 ml) of coconut milk
  • 2 tomatoes, diced
  • 1 green chili pepper, chopped (optional)
  • 2 tablespoons of vegetable oil
  • Salt and pepper to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat the vegetable oil in a large pan over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic, grated ginger, curry powder, and turmeric powder to the pan. Stir well to combine the spices with the onions.
  3. Add the diced tomatoes and green chili pepper (if desired) to the pan. Cook for a few minutes until the tomatoes soften.
  4. Pour in the coconut milk and season with salt and pepper. Stir the mixture gently to combine all the ingredients.
  5. Reduce the heat to low and let the curry simmer for about 10 minutes to allow the flavors to meld together.
  6. Add the fish fillets to the pan, making sure they are fully submerged in the curry sauce. Simmer for another 10-15 minutes or until the fish is cooked through and flakes easily with a fork.
  7. Remove from heat and garnish with fresh coriander leaves.
  8. Serve the fish curry hot with rice, chapati, or ugali.

FAQs about Fish Curry from Tanzanian Cuisine

1. Can I use any type of fish for this recipe?

Yes, you can use any firm white fish fillets such as tilapia, red snapper, or cod. Choose fish that is fresh and has a mild flavor.

2. Is there a substitute for coconut milk?

If you don’t have coconut milk, you can substitute it with heavy cream or plain yogurt for a creamier texture. However, keep in mind that this will alter the taste of the curry slightly.

3. Can I adjust the spiciness of the curry?

Absolutely! If you prefer a milder curry, you can reduce or omit the green chili pepper. On the other hand, if you like it spicier, you can add more chili or even sprinkle some red chili flakes while cooking.
