Dolma Recipe from Turkish Cuisine
Here is a classic recipe for dolma from Turkish cuisine:
Ingredients:
– 10-12 vine leaves (fresh or preserved)
– 1 cup rice
– 1 onion, finely chopped
– 2 tablespoons olive oil
– 1/4 cup pine nuts
– 1/4 cup currants
– 1 tablespoon dried mint
– 1 tablespoon dried dill
– 1 tablespoon lemon juice
– Salt and pepper to taste
– 1 cup vegetable broth or water
Instructions:
1. If using fresh vine leaves, blanch them in boiling water for a few minutes until softened. If using preserved vine leaves, rinse them under cold water to remove excess salt and soak them in warm water for a few minutes.
2. In a pan, heat the olive oil and sauté the chopped onion until translucent.
3. Add the pine nuts and currants to the pan and cook for a few minutes until the nuts are lightly toasted.
4. Rinse the rice under cold water until the water runs clear and add it to the pan.
5. Stir in the dried mint, dried dill, lemon juice, salt, and pepper. Cook the mixture for a couple of minutes.
6. Remove the pan from heat and let the stuffing mixture cool slightly.
7. Take a vine leaf and place it flat on a clean surface, shiny side down. Trim off the stem if necessary.
8. Place a spoonful of the rice stuffing in the center of the leaf.
9. Fold the bottom part of the leaf over the stuffing, then fold the sides inward, and roll it up tightly.
10. Repeat this process with the remaining vine leaves and stuffing mixture.
11. Place the dolmas in a large pot, seam side down, in a single layer.
12. Pour vegetable broth or water over the dolmas, making sure they are covered.
13. Place a heatproof plate on top of the dolmas to weigh them down and prevent unraveling during cooking.
14. Cover the pot and cook the dolmas over low heat for about 40-50 minutes or until the rice is fully cooked.
15. Once cooked, remove the dolmas from the pot and let them cool slightly before serving.
