– 500g of fine bulgur wheat
– 300g of ground beef or lamb
– 1 large onion, finely chopped
– 1 tablespoon of tomato paste
– 1 tablespoon of red pepper paste (optional, for extra spiciness)
– 1 tablespoon of ground cumin
– 1 tablespoon of ground black pepper
– 1 tablespoon of salt
– 1 teaspoon of paprika
– 1 teaspoon of dried mint
– 1 cup of walnuts, finely chopped

Instructions:
1. Place the bulgur wheat in a large bowl and cover it with boiling water. Let it sit for about 30 minutes until the bulgur is softened.

Fold the bulgur mixture over the filling, shaping it into an oval or cylindrical shape. Repeat this process until all the mixture is used.
6. Heat vegetable oil in a deep pan or fryer. Fry the stuffed köfte in batches until they are golden brown and crispy on the outside. Alternatively, you can also bake them in a preheated oven at 180°C (350°F) for about 25-30 minutes.
