Ingredients for Sucuk
– 1 kg ground beef or lamb
– 50 grams salt
– 50 grams paprika
– 25 grams ground cumin
– 25 grams ground black pepper
– 25 grams ground fenugreek
– 10 grams ground garlic
– 10 grams ground red pepper flakes
– 10 grams sugar
– 1 teaspoon sodium nitrate (optional)
Instructions
1. In a large mixing bowl, combine the ground beef or lamb with all the spices, salt, sugar, and sodium nitrate if using. Mix well until all the ingredients are evenly incorporated.
2. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 24 hours, ideally up to 48 hours, to allow the flavors to develop.
3. After marinating, take small portions of the mixture and shape them into sausage links, approximately 10-15 cm in length and 2-3 cm in diameter. Alternatively, you can stuff the mixture into sausage casings.
4. Hang the sausage links in a well-ventilated area, away from direct sunlight, for 2-3 weeks until they are fully dried and firm. Alternatively, you can place them on a wire rack or baking sheet in a cool, dry place.
5. Once the sausages are fully dried, they are ready to be enjoyed. Sucuk can be stored in an airtight container in the refrigerator for several months. Before consuming, it is recommended to cook the sujuk by frying or grilling it until it is cooked through.
