Ingredients
– 1 jar of vine leaves (around 30-40 leaves)
– 1 cup of rice
– 1/2 cup of olive oil
– 1 onion, finely chopped
– 1/4 cup of pine nuts
– 1/4 cup of currants
– 1 teaspoon of dried mint
– 1 teaspoon of dried dill
– 1 teaspoon of dried parsley
– 1 teaspoon of salt
– 1/2 teaspoon of black pepper
– 1/2 teaspoon of cinnamon
– Juice of 1 lemon
– Water for cooking
Instructions
1. Rinse the vine leaves under cold water to remove any excess salt.
2. In a large pot, bring water to a boil and blanch the vine leaves for about 5 minutes. Drain and set aside.
3. In a separate pot, heat olive oil and sauté the chopped onion until golden brown.
4. Add the pine nuts and currants to the pot and cook for another 2 minutes.
5. Add the rice, dried mint, dried dill, dried parsley, salt, black pepper, and cinnamon to the pot. Stir well to combine all the ingredients.
6. Cook the rice mixture for about 5 minutes, until the rice grains become translucent.
7. Take a vine leaf and place it flat on a clean surface. Remove the stem if necessary.
8. Place a teaspoon of the rice mixture near the stem end of the vine leaf.
9. Begin rolling the leaf from the stem end, tucking in the sides as you go, to form a neat roll. Repeat with the remaining vine leaves and rice mixture.
10. Arrange the stuffed vine leaves in a pot, placing them closely together to prevent them from unraveling during cooking.
11. Add enough water to the pot to cover the stuffed vine leaves.
12. Place a heatproof plate or a weighted lid on top of the vine leaves to keep them submerged in water while cooking.
13. Cook the stuffed vine leaves over low heat for about 30-40 minutes, or until the rice is fully cooked.
14. Once cooked, remove the plate or lid from the pot and let the stuffed vine leaves cool down.
15. Squeeze the juice of one lemon over the stuffed vine leaves before serving.
