Ingredients:
– 1 cup of rice
– 1/2 cup of olive oil
– 1/4 cup of lemon juice
– 1/4 cup of water
– 1/4 cup of pine nuts (optional)
– 1/4 cup of currants
– 1/4 cup of chopped fresh dill
– 1/4 cup of chopped fresh parsley
– 1/4 cup of chopped fresh mint
– Salt and pepper to taste
– Grape leaves (around 40-50 leaves)
Instructions:
1. Rinse the rice under cold water until the water runs clear. Drain and set aside.
2. In a large bowl, mix together the olive oil, lemon juice, water, pine nuts, currants, dill, parsley, mint, salt, and pepper.
3. Add the rice to the bowl and mix until well combined.
4. To prepare the grape leaves, blanch them in boiling water for a few seconds to soften them. Remove from the water and drain.
5. Lay a grape leaf flat on a clean surface, shiny side down. Place a spoonful of the rice mixture in the center of the leaf, near the stem end.
6. Fold the sides of the leaf over the filling, then roll it up tightly starting from the stem end. Repeat with the remaining leaves and filling.
7. Place the stuffed grape leaves in a large pot, seam-side down, packing them tightly together.
8. Pour enough water into the pot to cover the grape leaves. Place a heatproof plate on top of the leaves to prevent them from unraveling during cooking.
9. Bring the water to a boil over high heat, then reduce the heat to low and simmer for about 45 minutes to 1 hour until the rice is tender.
10. Remove from heat and let the grape leaves cool in the pot.
11. Once cooled, transfer the stuffed grape leaves to a serving platter and refrigerate for a few hours before serving.
12. Serve cold as an appetizer or a side dish.
