Turkmen Sarma Recipe

Ingredients:

  • 30-40 grape leaves, fresh or preserved
  • 500g minced meat (beef or lamb)
  • 1 onion, finely chopped
  • 1 cup rice, washed and drained
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon dried mint
  • 1 lemon, sliced
  • Water

Instructions:

  1. If using fresh grape leaves, blanch them in boiling water for about 2 minutes. If using preserved grape leaves, rinse them well with water to remove any excess salt or brine.
  2. In a large bowl, mix together the minced meat, chopped onion, rice, vegetable oil, salt, black pepper, cumin, and dried mint. Mix well until all the ingredients are combined.
  3. Take a grape leaf and place it on a clean surface, shiny side down. Spoon about a tablespoon of the meat mixture onto the center of the leaf.
  4. Fold the sides of the leaf over the filling, and then roll it tightly from the bottom to the top, similar to rolling a burrito.
  5. Repeat the process with the remaining grape leaves and filling.
  6. Place the stuffed grape leaves in a large pot, arranging them tightly next to each other. Place the lemon slices on top of the stuffed grape leaves.
  7. Add enough water to the pot to cover the stuffed grape leaves.
  8. Cover the pot and bring it to a boil. Reduce the heat to low and simmer for about 45 minutes to an hour, or until the rice is fully cooked.
  9. Remove the pot from the heat and let the stuffed grape leaves cool before serving.
  10. Serve Turkmen sarma as an appetizer or a main dish, and enjoy!
