Luwombo Recipe from Ugandan Cuisine

Ingredients:

– 2 pounds of meat (chicken, beef, or goat), cut into pieces
– 1 cup of peanut paste
– 2 onions, finely chopped
– 3 tomatoes, chopped
– 2 cloves of garlic, minced
– 2 tablespoons of vegetable oil
– 2 tablespoons of curry powder
– 1 teaspoon of ground ginger
– 1 teaspoon of ground black pepper
– 1 cup of water
– Salt to taste
– Banana leaves for wrapping

Instructions:

1. In a large bowl, marinate the meat with curry powder, ginger, black pepper, and salt. Let it sit for at least 30 minutes.
2. Heat the vegetable oil in a large pot over medium heat. Add the onions and garlic, and sauté until they become translucent.
3. Add the marinated meat to the pot and cook until browned on all sides.
4. Stir in the tomatoes and cook for a few minutes until they soften.
5. In a separate bowl, mix the peanut paste with water until smooth. Add this mixture to the pot and stir well.
6. Reduce the heat to low, cover the pot, and let the stew simmer for about 2 hours or until the meat becomes tender.
7. While the stew is cooking, prepare the banana leaves by cutting them into large squares and briefly blanching them in boiling water to make them flexible.
8. Once the stew is ready, remove it from the heat and let it cool slightly.
9. Take a piece of banana leaf and spoon a portion of the stew onto it. Fold the leaf and secure it with string or toothpicks to create a tight package.
10. Repeat this process with the remaining stew and banana leaves.
11. Place the wrapped luwombo packages in a steamer, and steam them for about 30 minutes.
12. Serve the luwombo while it’s hot with steamed rice or matooke (mashed green bananas).
