Holubtsi Recipe
Here is a classic recipe for making Holubtsi:
Ingredients:
– 1 large head of cabbage
– 500g ground meat (beef, pork, or a combination)
– 1 cup cooked rice or buckwheat
– 1 onion, finely chopped
– 2 cloves of garlic, minced
– 2 tablespoons vegetable oil
– 1 can (400g) crushed tomatoes
– 1 can (200g) tomato sauce
– 2 tablespoons tomato paste
– 1 cup chicken or vegetable broth
– 1 tablespoon sugar
– 1 teaspoon paprika
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)
Instructions:
1. Bring a large pot of water to a boil. Carefully remove the core from the cabbage and place it in the boiling water for a few minutes until the outer leaves soften and become pliable. Remove the cabbage from the pot and allow it to cool. Carefully separate the leaves, trimming off any thick veins.
2. In a skillet, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent and fragrant.
3. In a large mixing bowl, combine the ground meat, cooked rice or buckwheat, sautéed onions, garlic, salt, and pepper. Mix well until all the ingredients are evenly combined.
4. Take one cabbage leaf at a time and place a spoonful of the meat and rice or buckwheat mixture in the center. Fold the sides of the leaf over the filling and roll it tightly, similar to a burrito. Repeat with the remaining cabbage leaves and filling.
5. Preheat the oven to 180°C (350°F).
6. In a separate bowl, mix the crushed tomatoes, tomato sauce, tomato paste, chicken or vegetable broth, sugar, paprika, salt, and pepper until well combined.
7. Pour half of the tomato sauce mixture into the bottom of a large baking dish. Place the cabbage rolls on top of the sauce, seam side down. Pour the remaining sauce over the cabbage rolls.
8. Cover the baking dish with foil and bake for about 1 hour, or until the cabbage rolls are tender and the flavors have melded together.
9. Serve the Holubtsi hot, garnished with freshly chopped parsley.
