Al Harees Recipe
Ingredients:
– 500g cracked wheat
– 1kg meat (preferably lamb or chicken)
– 2 liters water
– 1 teaspoon salt
– 1 teaspoon ground cardamom
– 1 teaspoon ground cinnamon
– 1 teaspoon ground nutmeg
– 1 teaspoon ground cloves
– 1 cup ghee (clarified butter)
– Additional ghee for garnish
Instructions:
1. Soak the cracked wheat in water for at least 2 hours or until it softens.
2. In a large pot, bring the meat and water to a boil. Skim off any foam that rises to the surface.
3. Reduce the heat and let it simmer for 1-2 hours or until the meat is tender and easily falls apart.
4. Remove the meat from the broth and shred it into small pieces. Set aside.
5. Drain the soaked cracked wheat and add it to the meat broth.
6. Stir in the salt, cardamom, cinnamon, nutmeg, and cloves.
7. Cook the mixture on low heat, stirring occasionally, for approximately 2 hours or until the wheat is fully cooked and the mixture thickens.
8. Add the shredded meat back into the pot and mix well.
9. In a separate pan, melt the ghee and pour it over the Al Harees mixture. Stir until well combined.
10. Continue to cook the mixture for another 30 minutes, stirring occasionally to prevent sticking.
11. Serve Al Harees hot, drizzled with additional ghee on top for added richness, and garnish with a sprinkle of ground cinnamon if desired.
Frequently Asked Questions:
1. Can I use a different type of meat?
Absolutely! While lamb and chicken are commonly used in Al Harees, you can substitute them with beef or even a combination of meats to suit your preference. Just ensure that the meat is tender and cooked to perfection before adding it to the dish.
2. Can I make Al Harees vegetarian?
Yes, you can! To make a vegetarian version of Al Harees, simply omit the meat and replace it with vegetables such as carrots, peas, and potatoes. The cooking time may vary slightly, but the result will still be a delicious and comforting dish.
3. Can I use whole wheat instead of cracked wheat?
While cracked wheat is the traditional choice for Al Harees, you can use whole wheat if it is more readily available. Keep in mind that whole wheat may require a longer cooking time and may result in a slightly different texture compared to using cracked wheat. Adjust the cooking time accordingly to ensure the wheat is fully cooked and the dish reaches the desired consistency.
