Machboos Recipe from Emirati Cuisine
Here is a traditional recipe for Machboos:
Ingredients:
– 500g chicken, lamb, or goat meat, cut into pieces
– 3 cups basmati rice
– 2 onions, finely chopped
– 4 tomatoes, diced
– 4 cloves of garlic, minced
– 2 tablespoons machboos spice blend (a mixture of ground cinnamon, cardamom, cloves, turmeric, and black lime)
– 1 teaspoon saffron strands, soaked in 1/4 cup warm water
– 4 tablespoons ghee or vegetable oil
– Salt to taste
– Optional toppings: fried onions, chopped cilantro, and toasted almonds
Instructions:
1. In a large pot, heat the ghee or vegetable oil over medium heat. Add the chopped onions and cook until golden brown.
2. Add the minced garlic and cook for another minute until fragrant.
3. Add the meat to the pot and cook until browned on all sides.
4. Stir in the diced tomatoes and machboos spice blend. Let the mixture simmer for a few minutes.
5. Add enough water to cover the meat, season with salt, and bring to a boil. Reduce the heat, cover the pot, and let it simmer for about 1 to 1.5 hours, or until the meat is tender.
6. Meanwhile, rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.
7. In a separate pot, bring water to a boil and cook the rice until it is 70% cooked. Drain the rice and set it aside.
8. Once the meat is tender, remove it from the pot and set it aside. Reserve the cooking liquid.
9. In the same pot, layer half of the partially cooked rice, followed by the cooked meat, and then the remaining rice.
10. Pour the saffron water evenly over the rice. Cover the pot and let it cook on low heat for about 30 minutes, or until the rice is fully cooked and fluffy.
11. Fluff the rice with a fork and transfer it to a serving platter. Top with fried onions, chopped cilantro, and toasted almonds, if desired.
12. Serve hot and enjoy this delicious Emirati Machboos!
