- 3 cups Arabic rice (long-grain rice)
- 2 cups plain yogurt
- 1 tablespoon ghee or clarified butter
- 1 tablespoon vegetable oil
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 teaspoon ground cardamom
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- Salt, to taste
- Water, as needed
- Chopped parsley and roasted nuts for garnish
Instructions:
- In a large pot, heat the ghee and vegetable oil over medium heat.
- Add the chopped onion and minced garlic, sauté until golden brown.
- Add the lamb to the pot and cook until browned on all sides.
- Season the lamb with cardamom, cumin, turmeric, and salt. Stir well to coat the meat with the spices.
- Add enough water to cover the lamb and bring it to a boil. Reduce the heat, cover the pot, and let it simmer for about 2 hours or until the lamb is tender.
- Meanwhile, cook the rice according to the package instructions and set it aside.
- In a separate bowl, whisk the yogurt until smooth.
- Once the lamb is tender, remove it from the pot and set it aside. Keep the broth in the pot.
- In a large serving dish, spread a layer of cooked rice and arrange the pieces of lamb on top.
- Pour the yogurt over the lamb and rice, covering them completely. If desired, you can slightly warm the yogurt before pouring.
- Garnish with chopped parsley and roasted nuts.
- Mansaf is traditionally served on a large communal platter or directly on a round flatbread called “markook.”
