Thank you for reading this post, don't forget to subscribe!
Haggis is a traditional Scottish dish that has become an iconic part of British cuisine. It is a savory pudding made from sheep’s offal (heart, liver, and lungs) mixed with onions, oatmeal, suet, and various spices. Haggis is traditionally encased in a sheep’s stomach, although modern versions often use synthetic casings. It is usually served with neeps (mashed turnips) and tatties (mashed potatoes) and accompanied by a dram of whisky.
Haggis Recipe from British Cuisine
Here is a simple recipe to make traditional haggis at home:
Ingredients:
– 1 sheep’s stomach (or synthetic casing)
– 1 sheep’s heart
– 1 sheep’s liver
– 1 sheep’s lung (optional)
– 1 onion, finely chopped
– 150g steel-cut oats
– 100g suet
– 1 teaspoon salt
– 1 teaspoon ground black pepper
– 1 teaspoon ground nutmeg
– 1 teaspoon ground mace
– Water, for cooking
Instructions:
1. Rinse the sheep’s stomach thoroughly and soak it in salted water overnight.
2. In a large pot, place the heart, liver, and lung. Cover them with water, bring to a boil, and simmer for about an hour until tender.
3. Remove the cooked organs from the pot, reserving the cooking liquid, and allow them to cool. Once cooled, remove any excess fat or gristle and chop them into small pieces.
4. In a mixing bowl, combine the chopped organs, onion, oats, suet, salt, pepper, nutmeg, and mace. Mix well and gradually add the reserved cooking liquid until the mixture becomes moist but not too runny.
5. Stuff the mixture into the cleaned sheep’s stomach, filling it about two-thirds full. Press out any excess air and sew the stomach closed with kitchen twine.
6. Place the haggis in a large pot of boiling water, ensuring it is fully submerged. Reduce the heat to a simmer and cook for approximately 3 hours, occasionally turning the haggis.
7. Once cooked, carefully remove the haggis from the water and allow it to rest for a few minutes before serving. Slice open the casing and serve with neeps and tatties.
