Stargazy Pie from British Cuisine
What is Stargazy Pie?
Stargazy Pie is a traditional dish originating from the fishing village of Mousehole in Cornwall, England. It is a unique and visually striking pie that features fish heads poking through the pastry crust, which gives the dish its distinctive name. This iconic dish is typically served on Tom Bawcock’s Eve, a festival celebrated on December 23rd, to commemorate the heroic efforts of a local fisherman who braved stormy seas to provide food for the villagers during a harsh winter.

Ingredients
To make Stargazy Pie, you will need the following ingredients:
– 500 grams of shortcrust pastry
– 4-6 whole herrings, cleaned and deboned (with heads left intact)
– 250 grams of potatoes, peeled and diced
– 2 onions, finely chopped
– 150 grams of bacon, diced
– 3 tablespoons of fresh parsley, chopped
– 3 tablespoons of double cream
– 2 tablespoons of flour
– Salt and pepper to taste
– 1 egg, beaten (for egg wash)
Method
1. Preheat the oven to 200°C (400°F).
2. Roll out two-thirds of the pastry and line a deep pie dish.
3. In a pan, fry the bacon until crispy, then add the onions and potatoes. Cook until the onions are translucent and the potatoes are slightly softened.
4. Sprinkle the flour over the mixture in the pan and stir well until everything is coated.
5. Slowly pour in the cream while stirring continuously to create a thick sauce. Add salt, pepper, and parsley to taste.
6. Place the bacon, onion, and potato mixture into the pastry-lined pie dish.
7. Arrange the herrings on top of the mixture with their heads poking through the pastry.
8. Roll out the remaining pastry to create a lid for the pie. Make a few slits in the pastry to allow steam to escape during baking.
9. Brush the pastry edges with beaten egg and place the lid on top, pressing the edges to seal.
10. Brush the entire pie with the remaining beaten egg to give it a golden color.
11. Bake in the preheated oven for approximately 30 minutes or until the pastry is golden and the fish is cooked through.
FAQs about Stargazy Pie Recipe
1. Can I use a different type of fish?
Although the traditional recipe calls for herrings, you can use other oily fish such as mackerel or sardines. The key is to use whole fish with their heads intact to achieve the stargazy effect.
2. Can I make a vegetarian version of Stargazy Pie?
Certainly! You can substitute the fish with roasted vegetables such as carrots, parsnips, and butternut squash. Adjust the cooking time accordingly to ensure the vegetables are tender.
3. Is Stargazy Pie served hot or cold?
Stargazy Pie is traditionally served hot, straight from the oven. The warm, flaky pastry and savory filling are best enjoyed when freshly baked. However, leftovers can be refrigerated and enjoyed cold the next day.
