- 10-12 rice paper wrappers
- 200g ground pork
- 50g shrimp, peeled and deveined (optional)
- 1 small carrot, julienned
- 1/2 cup bean sprouts
- 1/2 cup cabbage, thinly sliced
- 2 shiitake mushrooms, soaked and finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1/2 teaspoon black pepper
- Oil for deep-frying
Instructions:
- In a bowl, combine the ground pork, shrimp, carrot, bean sprouts, cabbage, mushrooms, garlic, fish sauce, soy sauce, sugar, and black pepper. Mix well.
- Prepare a shallow dish with warm water to soften the rice paper wrappers.
- Take one rice paper wrapper and dip it into the warm water for a few seconds until it becomes pliable. Place it on a clean surface.
- Put about 2 tablespoons of the filling mixture in the center of the rice paper wrapper.
- Roll the wrapper tightly, folding the sides inward as you go, to form a neat cylinder. Repeat with the remaining wrappers and filling.
- Heat oil in a deep pan or fryer to 350°F (175°C).
- Carefully drop a few spring rolls into the hot oil and fry for about 3-4 minutes until they turn golden brown. Fry in batches to avoid overcrowding the pan.
- Remove the fried spring rolls with a slotted spoon and drain on paper towels.
- Serve the Nem Ran hot with your favorite dipping sauce.
