Ingredients:

– 500g white fish fillets (such as cod or haddock)
– 2 cups basmati rice
– 2 onions, finely chopped
– 4 cloves of garlic, minced
– 2 tablespoons vegetable oil
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1 teaspoon ground turmeric
– 1 teaspoon ground paprika
– 1 teaspoon ground black pepper
– 1 teaspoon ground cinnamon
– 4 cups fish or vegetable stock
– Salt to taste
– Fresh coriander leaves for garnish

Instructions:

1. Rinse the rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and minced garlic, and sauté until they turn golden brown.
3. Add the spices (cumin, coriander, turmeric, paprika, black pepper, and cinnamon) to the pot and stir well to combine.
4. Add the rice to the pot and stir gently to coat the grains with the spices and onions.
5. Pour in the fish or vegetable stock and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 15 minutes or until the rice is cooked and tender.
6. Meanwhile, season the fish fillets with salt and pepper. In a separate pan, heat a little oil and cook the fish until it’s cooked through and flakes easily.
7. Once the rice is cooked, fluff it up gently with a fork and transfer it to a serving dish.
8. Place the cooked fish fillets on top of the rice and garnish with fresh coriander leaves.
9. Serve hot and enjoy the delicious flavors of Sayadiyah!
