Lumanda Recipe

Ingredients:

  • 200g dried fish (kapenta or any dried fish of your choice)
  • 1 bunch of pumpkin leaves (chibwabwa or chisaka)
  • 1 cup groundnuts (peanuts)
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 tablespoons vegetable oil
  • 2 cloves of garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions:

  1. Soak the dried fish in water for about 30 minutes to remove excess saltiness. Drain and set aside.
  2. Boil the groundnuts until soft. Once cooked, remove the skins by rubbing the groundnuts between your hands. Set aside.
  3. Wash and chop the pumpkin leaves into small pieces.
  4. In a large pot, heat vegetable oil over medium heat. Add the chopped onions and minced garlic, cooking until the onions turn translucent.
  5. Add the diced tomatoes, paprika, salt, and black pepper to the pot. Stir well and let it cook for 5 minutes.
  6. Add the soaked dried fish, groundnuts, and chopped pumpkin leaves to the pot. Stir gently to combine all the ingredients.
  7. Reduce the heat to low, cover the pot, and let it simmer for 20-30 minutes, or until the pumpkin leaves are tender.
  8. Once cooked, serve the lumanda hot with a side of nshima (a staple Zambian food made from maize meal) or any other preferred starch.
